Chocolate Chip Banana Bread

My sweetie doesn't like banana flavored foods even though he loves bananas.  This has been quite disappointing for me.  I feel like I'm not allowed to make a yummy treat like this if I'm the only one who is going to eat it.  My rules drive me crazy.  How could he not like warm, moist banana bread right out of the oven with a pat of butter on it?

I tried adding coconut.  Nope.
I tried adding nuts.  Of course not.
I tried adding chocolate.  Bingo.  That's right.  My man loves chocolate more than any premenstrual woman.

So here you go:



I really miss my mom's banana bread recipe.  I still haven't been able to copy her banana bread recipe to get her really good crust.  This one will just have to do.  But it's a good one.  I went on the hunt for this recipe after I had the chocolate chip banana bread at starbucks...last year?  two years ago?  I don't know.  But this is the one I make now.




All of my chocolate chips sunk down through the middle of the batter as it began to bake and rise.  Can you see?  Don't do that.  Toss your chocolate chips in some flour first before you add them to the batter and before you sprinkle them on top.

Just a side note I want to share.  I have a little hand held vacuum I like to use once in awhile.  Well today I found a really good use for it while I was cleaning the bathroom.  You can vacuum hairs out of your tub before you get it wet.  Keeps the drain from clogging.  A tidbit for you if you live with a hairy person ;)  I was so amused with my cleaning creativity today.


Chocolate Chip Banana Bread
  • 1 stick butter, room temp
  • 1½ c sugar
  • 2 eggs
  • 1tsp vanilla
  • 4Tbsp sour cream
  • 2 mashed bananas
  • ¼ tsp salt
  • 1 ½ tsp baking soda
  • 2c cake flour, plus extra to toss the chocolate chips in
  • 1¼ c chocolate chips, divided 
 
Heat oven to 350°. Prepare loaf pan by spraying with pam and lining with parchment paper.
 
Mix butter and sugar. Add in eggs, vanilla and sour cream. Mix. Add in bananas. Mix. Add in salt, baking soda, and cake flour. Mix. Toss the chocolate chips in a few extra tablespoons of cake flour.  Add in 1 cup of chocolate chips and combine. Pour batter into loaf pan. Top with the last ½ c of the chocolate chips.  Bake for 55 minutes.  Let cool for 15 minutes and remove from pan by lifting parchment.  Yields 10 slices.
