Egg White Frittata for Two and OnlineBlogCon 2012 Review

This is the last recipe I planned to try from Giada's cookbook.


Isn't that a good lookin foodie photo? I've been learning a lot this week. Kind of an understatement I'm sure. I used my point and shoot for that photo and picked up some easy peasy photoshop bits I learned in OnlineBlogCon 2012. Did you attend?

It was amazing! There was soooo much to absorb and not enough time. So I haven't been posting much because of this conference, the crazy complementing facebook group that's become quite addicting, my full time job, and then I've taken on this project of painting my kitchen cabinets. Almost done! One more weekend of "that mess." Imaging my mom saying "that mess" makes me grin.

So my sweetie and I had this frittata for breakfast today. 
And pumpkin spice krispy kreme donuts.

Egg-White Frittata for Two
  • olive oil
  • 1/2 cup arugula, chopped
  • 1 garlic clove, chopped
  • 4 large egg whites, room temperature
  • 1/4 cup heavy cream
  • 3 oz lox or smoked salmon, chopped into 1/2" pieces
  • zest of 1/2 a lemon
  • salt and pepper to taste

Preheat oven to 350 degrees F.

Preheat small nonstick, oven safe pan on low-medium. Heat a bit of olive oil. Add the arugula and garlic. After about 1 minute of stirring add your following egg mixture.

Whisk the egg whites until fluffy, about 30 seconds. Add in heavy cream, lox, zest, salt, and pepper. Pour this into the pan and stir to combine. Cook for four minutes without stirring!! Place the pan in the oven for 10-12 minutes.

Slide frittata onto a platter. Using a serrated knife, cut the frittata into two halves. One for you and one for your sweets. Serve warm or at room temperature.

Eat it.

  5. I have to say, I'm not big on egg whites, but with all the other yummy stuff in there I think I would do just fine! The conference was awesome. So much information. It was everything I expected and more!
