Pancake Mini Muffins

I had a really good laugh watching my strong and silent, lumberjack of a sweetie pie eat these teeny weeny pancakes.

They just seemed like the best idea. Pancakes in the muffin tin. Why not?

And you know, if we ever do have children, it would be really sweet to see them hold tiny pancake muffins.

Pancake Mini Muffins

  • 1 1/2 cups flour
  • 1 cup buttermilk
  • 2 eggs
  • 2 Tbsp sugar
  • 2 Tbsp canola oil
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp cinnamon

Preheat oven to 350 degrees. Prepare a 24 cup mini muffin pan with nonstick cooking spray or mini muffin liners. 

In a large bowl, whisk together the flour, sugar, baking powder, salt and cinnamon. Add the buttermilk, oil and eggs and mix until a lumpy batter forms. You want it lumpy. Spoon about one tablespoon of batter in each well and bake for 13-15 minutes, until slightly golden. Remove from the oven and let cool in the pan for about 5 minutes before serving.

Garnish with butter and syrup.


I have the gold mini muffin pan sold at Williams Sonoma, but this one is nice too.
