Cheesy Ranch Potatoes

I did not come up with this recipe.

One day I will create an about me page and there will be a something on it about how I am not a recipe developer. Most of my recipes come from a cookbook or the internet (other blogs/pinterest/Martha Stewart/food network....). The few that I do come up with will not have a source listed below the recipe. But then I look at this recipe and think, "it's really a method."

Broil potatoes.
Add some mix ins.
Bake with cheese on top. 

It's really easy.

The original recipe says to roast potatoes. I don't have time for that. I broil and stir often.

I mixed in ranch dressing, chipotle chili pepper, salt and pepper, and diced butter.

I did realize the diced butter was unnecessary since I mixed in ranch dressing. Use the butter if you go with dry ranch mix from the packet.

Cheesy Ranch Potatoes

  • 2 lbs. red potatoes, diced large
  • 2 Tbsp olive oil
  • salt and pepper
  • 2 teaspoons chipotle chili pepper
  • ranch dressing, squirt as much as you want (1/4 cup should do it)
  • 1/2 cup cheddar cheese, shredded

Heat the broiler. Clean and dice the potatoes. Use your hands to mix them with the oil. Place on an oiled bar pan like in the first picture. Broil them and stir them every 4 minutes until you can easily pierce with a knife.

Mix potatoes with salt and pepper, chipotle chili pepper, and ranch dressing. Pour into a casserole dish. Top with shredded cheese. Boil until the cheese is brown and bubbly.

The finished product broiled with cheese on top.
