Banana Bread

This is my mom's favorite banana bread recipe.
It is the best banana bread recipe you will ever eat.
She's been making it for at least 25 years now.

My sweetheart and I were really sick last week, and I missed three days of work. Three days!!!! That hasn't happened in 10 years. On Wednesday I think my body was in need of some potassium because I was craving my mom's banana bread. She was so nice and made this batch and fedexed it to me overnight.

NOT! She wouldn't do that.

But she did take pic of the recipe and she emailed it to me. I had to go out Wednesday to buy the bananas (so sorry to all the strangers I infected!). I made the bread Wednesday evening so it would be ready for breakfast on Thursday morning. Well Thursday was the shittiest of them all. I woke up Thursday morning at 11:30, ate myself a slice of banana bread slathered with salted butter, watched an episode of Chelsea Lately, and promptly went back to bed at 12:30 pm. I laid in coffin position all day!!

The bread was my only sustenance and saved me from death.

Moving on...
I lost 6.5 pounds last week. There's always a silver lining.

This is really the best banana bread you will ever eat. It's very moist and dense--because there are 5-6 bananas in this bread! Also, if you can tell from the photograph, this bread makes the best crust.

One of my first posts was chocolate chip banana bread. Of course the photography is horrible and the loaf didn't turn out so beautifully, but mind you, that was not this recipe.

Banana Bread

  • 3/4 cup unsalted butter, room temperature
  • 1 1/2 cups sugar
  • 5-6 mashed bananas
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup buttermilk

I used a 10" loaf pan from Calphalon and sprayed it with non-stick cooking spray. Heat the oven to 350 degrees. 
Cream the butter and sugar. Add bananas, eggs and vanilla. Mix. Add the flour, baking soda, salt and buttermilk. Stir it all together. Pour into the loaf pan and bake for 1 1/2 hours or until a toothpick inserted in the center comes out clean. Yes 90 minutes. Plan accordingly.
