Taco Soup

Taco Soup is a really easy, hearty, one-pot, you-won't-believe-you've-never-made- this-before kinda meal.

I first acquired this recipe at a Weight Watchers' meeting about ten years ago. I have no idea who wrote it, but later I saw it in Paula Deen's cookbook and pinterest. With the old points system, it was one cup=one point. Of course you can't garnish it with cheese and sour cream.

Or serve it with tortilla chips. I used to love those Tostitos Gold chips. What ever happened to them?

Speaking of weight watchers and diety things...I tried on my Kate Spade Broom Street Jeans that I bought a year ago, size 30, and I can still fit into them! Yay! It was a close call because I did buy them a bit tight. I should have gone with my intuition and gotten the size 31 because the whole leg part of the jean is really tight. (The tiny shop-girl told me to buy small because they stretch.) The waist is not tight, very stretchy, but it sags like I need a belt and some lower back pops out. It's strange, but I'm still going to wear them! YOU can't stop me! 

Yeah, so always buy clothing to fit the largest part of your body, and you can take it to the tailor to get it taken in in other areas. I shoulda taken my own advice.

Taco Soup

  • 1 Tbsp olive oil
  • 1 lb ground beef, 93/7
  • 1 large onion, chopped
  • 15 oz can dark red kidney beans, rinsed and drained
  • 15 oz can black beans, rinsed and drained
  • 15 oz can yellow hominy, rinsed and drained
  • 15 oz can chili beans, in sauce, undrained
  • 4 oz can green chilis
  • 15 oz can tomato sauce
  • 15 oz can petite diced tomatoes
  • 1 packet of ranch dressing mix
  • 1 packet of taco seasoning mix
  • 1 cup of water            

For serving:
corn bread or warmed tortilla chips
sour cream
cheddar cheese
guacamole or sliced avocado

Heat a large stock pot on medium. Add one tablespoon of olive oil and brown the ground beef. Add chopped onion once the beef is cooked through. Let the onion saute for about five minutes then add everything else. Bring to a boil then lower the temperature to low and simmer for 15 minutes.
